Kiwi mojito

Mojitos with a kiwi-twist!

Mojitos are easy to make, refreshing and best of all, you can mix it up with lots of different fruits according to seasonal availability. Kiwi fruits are in season throughout Winter in Australia which is when we recommend trying this drink.
For an extra burst of flavour, we’ve used Nexba Lemon Sparkling Infusion in place of soda water. If you prefer a more subtle flavour, you can use a blend of our Nexba lemon soft drink and water.

Ingredients
Servings 2
2 kiwi fruits, peeled and sliced
Juice of 1 lime
1 handful mint leaves
3 shots white rum
1 handful ice cubes
Nexba Lemon Sparkling Infusion
Kiwi fruit, to garnish
Lime, to garnish

Directions
- Combine kiwi fruit, lime juice and a few mint leaves in a high power blender, blend until pureed.
- Combine white rum and kiwi blend.
- Distribute ice cubes, mint leaves and kiwi fruit/lime wheels between 2 glasses.
- Spoon in the kiwi fruit puree and finish with Nexba Lemon Sparkling Infusion.
- Serve and enjoy.
