Creamy Raspberry Pops Recipe

These creamy raspberry pops are the perfect healthy alternative to ice-cream. The combination of cashews and coconut yoghurt creates that delicious, creamy texture while the raspberries and Nexba raspberry sparkling infusion creates the naturally sweet flavour.

If you want to make it even healthier, feel free to get creative by adding in superfood powders. Try beetroot powder for a more vibrant pink colour or açai powder for a deep purple pop.

Ingredients

Servings 6.

1/2 cup cashews
1/2 cup coconut yoghurt
1/2 cup Nexba raspberry sparkling infusion
1/2 cup frozen raspberries
1/2 tsp vanilla essence

Instructions

  1. Combine all ingredients in a high-power blender. Blend until smooth and creamy.
  2. Pour into icy pole moulds and transfer to the freezer. Allow to set for 4-5 hours or overnight.
